Ingredients:


  • 2 cups rice (preferably long-grain or basmati)

  • 1 cup mixed vegetables (carrots, peas, sweet corn, bell peppers)

  • 1/2 cup cooked liver or shrimp (optional)

  • 1/2 onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon curry powder (for that classic yellow color)

  • 1 teaspoon thyme

  • 1 double seasoning cube

  • 1/2 teaspoon white or black pepper

  • 2 tablespoons soy sauce (optional, for extra flavor)

  • 1/2 teaspoon salt (to taste)

  • 3 tablespoons vegetable oil

  • 1/2 cup chicken stock (for more flavor)

  • Diced chicken or deboned fish


Instructions:


1. Parboil the Rice


  • Wash rice in water and drain.

  • Add in some water and parboil for about 8-10 minutes until it's halfway cooked

  • Drain and rinse again with cold water to stop cooking.

  • Heat 1 tablespoon of oil in a large pan or wok.

  • Stir-fry cooked chicken or fish for 2-3 minutes until lightly browned.

  • Remove and set aside.

  • In the same pan, add another 1 tablespoon of oil and sauté the onions and garlic until fragrant.

  • Add the carrots, peas, sweet corn, and bell peppers, and stir-fry for about 2 minutes.

  • Add the remaining 1 tablespoon of oil to the pan.

  • Stir in the parboiled rice and mix well with the veggies.

  • Add in the curry powder, thyme, seasoning cube, salt, and pepper.

  • Pour a little chicken stock in and soy sauce, Cook for a few minutes until rice is tender and fluffy.

  • Serve hot with grilled chicken, fried plantains, or salad.

  • Pair it with a spicy pepper sauce for extra heat!
